Why I love Ghee

What is Ghee made of?

Ghee is purified clarified butter, which is very popular in India and increasingly popular around the world for its therapeutic qualities. And what is great to know is that during its production process, the substances of butter that are most difficult to digests such as lactose, casein, and whey proteins are removed. So people with lactose intolerance can consume it without any problems.

What is so special about Ghee?

The Ghee stands out for many things that I love introducing you: Due to not having saturated or hydrogenated fats, preservatives, dyes, or additives, it makes it a true ¨Elixir of life¨, and naturally healthy food. Rich in antioxidants, vitamins, and water-soluble minerals as well, aiding in the absorption of these nutrients. And in addition, among the number of vitamins it has are vitamin A, D, E, and vitamin K2 or also called menaquinone essential to have strong bones.

And what else? well, another thing that makes it so special is that its consumption allows the body and mind to nourish themselves by regenerating more flexibly and harmonious, giving them a special glow!

And talking symbolically about glow, in the temples and rituals of South India, they use it in the oil lamps “Nilavilakku”.

Ghee from the Ayurvedic point of view

Ghee is the best of fats and in correct doses it can be ¨Tridoshic¨, referring to an equal balance of Vata, Pitta, and Kapha doshas. Although is one of the best foods that harmonize Pitta and Vata, and because it has anti-Pitta properties, it stimulates the digestive fire or ¨Agni¨ without aggravating this dosha.

Although it´s important to note, that because it´s heavy too, the dosha Kapha can increase if it isn´t taken in moderation.

Daily use recommendations

It´s recommended to administer it in small amounts along with other foods, so as not to exceed the amount if the person’s predominant dosha or imbalance suited it. Then, depending on the particularity and condition, it can be taken separately from meals from half to one teaspoon. And a very important note: In case of obesity (excess of Ama), or high cholesterol, for example, a serious and competent professional in Ayurveda should be consulted, to indicate the best forms and amount suitable, for its use or consumption.

How to use Ghee:

  1. Ideal for cooking as oil is used to make a sauté/stir-fry, to add to vegetables, legumes, pasta, as Ghee can withstand heat up to 485oF (252oC).
  2. Ideal for cosmetic use as the best friend for dry skin, wrinkled or even irritated skin. In Ayurvedic routines is commonly included for cleaning and/or nourishing the nose, eyes, and ears

The differences between Ghee and Butter

Some people may think they are the same thing, while it is important to point out some differences:

  • As I mentioned before, whenever Ghee is elaborated the lactose, casein, and whey proteins are removed, being lactose-free, unlike that all these substances remain in butter. So ghee it´s better if you have sensitivities or allergies to dairy products.
  • Ghee can withstand better heat up to 485°F (252°C) when butter can only smoke and burn at 350°F (177°C).
  • Ghee does produce less of a chemical compound called acrylamide, a toxin developed when starchy foods are cooked at high temperatures.

Here it is important to see that the fat and calorie differences between Ghee and Butter are negligible, although if we are talking about properties you should know now which one to choose from.

It´s important to consider that in the end what you really have to look for as a consumer of Ghee, is the best quality-price product. Which sometimes gets complicated when we see so many brands and prices without knowing if we’re taking the right resolution when choosing one or the other. Especially more crucial when we want to improve our health.
